With a CV that reads like a list of the best French restaurants in France and the UK, Franck Raymond, lattery head chef of Mon Plaisir in Covent Garden is chef patron of Augustine Kitchen, a charming rustic French bistro in Battersea. In his latest venture, Franck showcases authentic French dishes using produce from the Evian region where he was born and where he set up his first restaurant Le Cheval Blanc. This means that some fish comes fresh from Lake Geneva (when available) and the menu includes delicacies like cassolette of snails with garlic and parsley butter, French onion soup glazed with bleu de termignon and Reblochon and green apple fritters. Mains at the 60 cover restaurant include fillet of sea bream bouillabaisse, slow cooked pork shank with flageolets and sage jus and roast duck magret with spicy poached pear and timut pepper sauce. French-style tapas, available in the bar, includes black pudding and apple tartelette, duck rillettes and Reblochon and bacon gougeres. There's a comfortable family feel to Augustine Kitchen which has been designed by the chef himself and is named after his grandmother.
