Specialising in authentic Tonkotsu ramen, Kanada-Ya adds a second outlet to the original restaurant on St Giles High Street. This Panton Street restaurant is larger - thankfully; the original is a small space - seating up to 56 covers over 2 floors (ground and basement) and more sleek in its interior design. The brand was founded by Kanada Kazuhiro in Yukuhashi, Japan, back in 2009, and all noodles are made on site with a special machine, imported from Japan. Whilst extremely time-consuming this process results in a rich clarity of taste and a delicious, creamy appearance that sets Kanada-Ya's ramen apart. And customers can request how firm they like their noodles, which are then cooked accordingly. The Soho restaurant offers the same selection of ramen as the St Giles original but with some new additions such as fried chicken, gyoza and korokke alongside. On the extended drinks menu are bottled cocktails, rare Japanese beers and a wider wine selection.
