Visitor Information
A small Japanese joint with 20 or so seats and limited choices but all of them almost done to perfection prompting Giles Coran to confess in The Times, "I love Kanada-Ya. I love the devotedness to a single task and the aplomb with which they carry it off." Expect to queue during lunch time, it might look off-putting but it's worth the wait - which is typically 20 minutes. Specialising in authentic Tonkotsu ramen, the brand was founded by Kanada Kazuhiro in Yukuhashi, Japan, back in 2009. All noodles are made on site with a special machine, imported from Japan, that uses a very specific brand of flour, enriched with the right protein content and alkaline salts to produce a bouncy, firm noodle capable of standing up to the rich broth.
