Neapolitan pizzas made with san marzano sweet plum tomatoes and mozzarella fior di latte from Agerola are the real deal at Laboratorio Pizza on Brick Lane. Restaurateur Ivan Simeoli, former head chef at Gigi's and Osteria 60, who has worked with Michelin-starred chefs during his 20 years in the kitchen, draws on his Neapolitan roots and the spiritual home of the pizza for this Brick Lane outlet. The menu focuses on artisan bread-making, with all dishes having a bread or dough element - and all prepared on site from scratch. T he atmosphere is relaxed, informal and convivial while the restaurant itself is designed by young Italian architect Maria Morra. To top up the pizza, there's fresh pizza fritta - sealing the topping between two layers of dough and deep-frying until crispy - Mediterranean-inspired pasta dishes, antipasti and dips - perfect for dunking pizza crusts - of basil pesto, honey and n'duja, garlic aioli and spicy tomato.
