After Viajante and Chiltern Firehouse, Nuno Mendes set up Maos, a small restaurant on the first floor of six-storey Blue Mountain School in Shoreditch. Opened in April 2018, 18 months later it was awarded a Michelin star. Nuno has since left but head chef Edoardo Pellicano and their team continue to cook for 16 guests six nights a week. The kitchen is in the dining room at the restaurant, designed by 6a Architects, and visitors are encouraged to walk around both. Guests all sit together around the communal table and are encouraged to interact with the chefs and explore the stripped-back space as they dine. The modern 14 course menu draws on flavours from Europe, Asia and beyond, seen in beef fat aged lobster, gooseberry umeboshi and semi dried tomatoes, fermented sweet potato flat bread, XO and lobster claw. General manager Alex Casey, formerly of Sager + Wilde, oversees the drinks stocked in the wine room where the focus is on clean approaches to winemaking. You can choose bottles based on your tastes, or opt for wines to be paired with each dish.
