Former Palomar head chef Jeremy Borrow leaves the Soho restaurant to head up the kitchen at Nutshell, an Iranian restaurant in Covent Garden. Owned by h usband and wife team Mohammad Paknejad and Marwa Alkhalaf, who has worked at The Greenhouse in Mayfair, the 80 cover restaurant specialises in giving traditional Iranian recipes a modern twist, working with those family favourites handed down from generation to generation but which don't often make it into restaurants. Sharing plates and freshly made breads both feature prominently while brining, pickling, drying and fermentation are among the techniques used. Interiors by B3, the designers behind Lyle's and Gymkhana, include a ground floor space with an open kitchen and counter dining while upstairs the semi-private first floor area caters for bigger group bookings.
