Officina, Italian for 'workshop', and 00 (double-zero) - the finest grade of flour - gives this fresh pasta restaurant near Old Street its name. Bringing together regional Italian recipes with artisanal pastas, prepared before diners in a theatre kitchen, Officina 00 is centred around a spianatoia, a traditional wooden work-bench, where chefs make the food. Executive Chef Elia Sebregondi and Director Enzo Mirto, who grew up together in Naples, have put together a menu that's largely flour led, featuring freshly baked sourdough, Italian pastries and pasta, prepared front-of-house in the 'lab'. Each dish tells a story from Elia and Enzo's time in Italy. The signature pasta dish, Occhi (named after the fishermen who slow-cook pork while out at sea) is filled with a braised pork Genovese, sour parsley and provolone. Home-made limoncello and pasta inspired by a trip to the Amalfi coast can be enjoyed at tables made from dried oak or at the tiled counter overlooking the kitchen decorated with antique pasta machines, which Elia and Enzo have spent years collecting.
