Fire cooked meats are the main attraction of the Islington Smokehouse, a well regarded restaurant from Neil Rankin, former head chef at Pitt Cue, and Noble Inns whose other pubs include The Princess of Shoreditch, Pig & Butcher in Islington and a second Smokehouse in Chiswick. Despite the name, dishes aren't just smoked, they're roasted, grilled and barbequed over fires made using sustainably sourced English oak and from carefully sourced ingredients. Fish is delivered daily from Cornish markets, beef is Highland Cattle from Abbotts Close Farm, Thirsk and Shorthorn from A.J. Ingram in Speyside, and fruit and veg come fresh from Keveral Farm, Cornwall and Natoora. Served in "a beautiful boozer, artfully lit with candles indoors and fairy lights in the pretty garden" (writes Marina O'Loughlin in The Guardian), starters include chopped brisket roll and gochujang - a hot pepper paste Korean condiment - cold fish with hot chip, monk's beard and mussel sauce, and goat tacos. Moving on to mains you get choices of chilaquiles, grilled salmon and Thai salad, Highland cow burger, Korean pulled pork and roast potatoes, and smoked lamb shoulder served with polenta, raclette and sambal. Shortrib bourguignon, with its tender rib meat served on the bone, is something of a speciality.
