Yamagoya , specialising in traditional Japanese ramen, open their first real home in London, a permanent site on The Cut after a successful residency on Shaftesbury Avenue. A bigger and better space, with an added takeaway option, favourite Japanese dishes include the signature ramen and raindrop cake. Handmade noodles come immersed in a smoky, green tonkotsu broth, garnished with traditionally prepared Japanese Chashu pork belly, marinated bamboo shoot, Kikurake mushroom, nori and marinated Burford Brown egg. Alongside the ?Tobanjan?, a fiery tobanjan spiced broth known to locals as ?the fire of food?, finished with chilli pepper. The raindrop cake, a clear dessert made in the shape of a water droplet, can be infused with matcha. Located on The Cut, the interior is simple and stripped back with pine stools and Shoji wood paneling, reminiscent of the original ramen shop in Fukuoka owned by founder Masatoshi Ogata.
