With two successful London restaurants already to his name Roberto Costa adds a third Macellaio RC , in the redeveloped Union Yard Arches. Known for its high quality beef and somewhat gruesome show windows - "Meat dangles on hooks like a scene in Saw" (The Guardian) - this Union Street restaurant adds a theatrical in-house butchery and a Ligurian bakery to the offering. As well as beef hung behind glass, there's a stage where the best cuts of the day are showcased running between two large banquet tables. A white marble butcher's block framed by curtains, creating a sense of drama, sits pride of place in the ground floor dining hall, the prep space for butchers and chefs to work on steaks, carpaccios, tartares, and cured meats in front of the guests. In the Ligurian bakery, or 'Pizzeria secondo me', dough is handmade daily for traditional Ligurian breads, vegetable tarts, fresh pasta and pastries, including Torta di Bietole e prescinseau (swiss chard and curd tart) and Focaccia al formaggio di Recco. But the Fassona beef, which "delivers a blast of purest beefy flavour" (Marina O'Loughlin), is the star attraction.
